My Golf was losing coolant, not as rapidly as that though. Turned out to be a worn out auxiliary pump.I'm not a mechanic BTW. Just seemed a similar problem in a VW group vehicle
If there are no signs of where the coolant is going, Filo the Head Gasket sounds most likely. Don't know the Skoda engine and any similarity with the Golf but I had a Golf that suddenly was overheating and blowing the water out of the pressure release. That was caused by the water pump plastic impeller shearing and not moving the water between engine and radiator. No visible signs of the failure other than the overheating.
Got to feel sorry for the next owners who have to deal with that sproty
