With regards to Joe I am convinced he will sign unless he get an offer from a championship club.

Wouldn't the best solution be the way we handled Ben Whiteman?
Sign for us but we promise to let you go if we get an offer of £X million

That's what release clauses are and it's likely they'll be included in players current contracts. Like Marquis, Whiteman, Molyneau and maybe others we don't know about.

There's always folk who say we sold players cheaply etc, but if a club matches the release value that's negotiated when a player renews his contract, then we can't stand in their way. We rejected a few bids for Marquis & Whiteman until Portsmouth & Preston matched the release values. Then they were free to talk to them.

If we were to insist on a too high a release clause, then chances are the players wouldn't agree and could have easily walked for free instead of re-signing.

The easy ones, probably those who know they are better off here, and not a lot of options else where will have been quick to accept an offer from us.
Those that know there is interest elsewhere either for more money or at a higher level will be encouraged by their agents whose own reward is linked to just what they can do  for the betterment of their player will stretch it out until the end of June  for their own pay day.
Molineux  looks tied down which gives the club some control there although the Rovers being the Rovers don't hang your hat on him staying if an acceptable offer came in for him. Olowu is different in that he and his agent controls the situation and we if other clubs are interested are just a part of the auction game and money talks especially to mid twenty year olds who usually only have at best a limited number of years  job security in front of you players like Wood the exception to that rule.
Of the others apart from Bailey probably, I can't see where clubs would be falling over themselves to sign many of them, most being decent division 2 players and having to prove themselves next season in a higher division where if they perform will give them more gravitas to kick on to higher levels, most of the attractive lads to other clubs apart from those mentioned being young loan players just starting out and would be cheap to higher clubs.
